Find your favourite combination of fresh mushrooms and pan fry them with cream, white wine, fresh garden herbs and perhaps a few toasted pine nuts for fantastic fast food. Serve on a halved croissant, brioche or toast, and with a light green salad. This kind of creamy mushroom stroganoff-style side is a perfect accompaniment to beef steak or a pork chop, or tastes scrummy simply served with gnocchi or tagliatelle.
Italian home-cooks certainly know the importance of quality wild 'shrooms and we've selected a handful of inspiring recipes from the likes of Gennaro Contaldo, Angela Harnett and Antonio Carluccio. Use heady dried porcini mushrooms for an instant zap of heartiness. Soak them in warm water for 20 minutes, retaining the soaking water to add extra depth to your stock for risottos and soups. A splash of sherry, port, white or red wine will add an almost giddy richness to their earthy flavour. Don't let anyone tell you life's too short to stuff a mushroom. Try filling Portobello mushrooms with feta, mozzarella, halloumi or Stilton and place a slice of tomato on top. Scatter some breadcrumbs over too if you please and bake in a hot oven until the cheese is bubbling and unctuous.
